Hello foodies! One of the most delicious and popular food worldwide is pasta! As a vegan, I love trying different kinds of sauce, in order to enhance the already great taste of pasta with plant based extracts, veggies and nuts! One tip that always works for a better taste is: using herbs and olive oil! Greece is the paradise of herbs and olive oil! There are plenty to choose, combine and add at your recipes for a great result. Using herbs, you can make delicious plates for you and your beloved ones. Let’s make together an easy, super tasty, vegan, pasta plate!
You will need (recipe for 4):
1 package of pasta
2-3 potatoes
1 small onion
10-15 cashews
Herbs (salt, pepper, Oregon and Basil)
Greek extra virgin Olive oil
To begin with, start boiling the onion and the potatoes in a small utensil. Then, what you have to do is to cook the pasta in boiled water for 10-12 minutes and stir them. Warm a big spoon of extra virgin olive oil for 2 minutes at the same saucepan, add the pasta in it and mix it well. Dadaaan!! The pasta is ready but, please, stay away from the ketchup!
Now it’s time for the fun part: the sauce! You put the boiled potatoes, boiled onion, cashews and herbs with a small spoon of olive oil at a multi cutter. You blend all the ingredients together until the result has the look of a nice white sauce and you’re done. That’s all folks! Easy one?
The food is ready! Just put the pasta in your plate, add some sauce and enjoy your delicious vegan meal!
TIP: For an extra “cheesy” taste, put some smashed salted cashews on the top and here you go! Bon Appétit or as we say in Greece “kali oreksi”!
